Illuminated Ales

Moonlight Tower Brewing Company uses 100% organic malt and hops in all of our hand-crafted ales. While it is not easy to brew 100% organic beers, it is a commitment we are making to you and the environment and we hope you enjoy the results!

Wild Rye

A blonde style beer brewed with flaked rye and local wildflower honey. Unlike most blonde beers, this one is aggressively hopped. It borders on the American pale ale style, but with a restrained bitterness. The hops contribute intense floral and citrus flavors and aroma. Wild Rye is a dry, crisp, and refreshing beer that pairs well with the Texas seasons. 4.8% ABV, 35 IBUs.

Weize Uncle

A traditional Bavarian-style dunkelweizen brewed with wheat, munich, and dark crystal malt to create a rich, bready, caramel flavor. We use an authentic Bavarian yeast strain that adds a complex clove flavor and aroma. This is an easy drinking amber wheat beer that honors the rich German brewing heritage of Central Texas. 5% ABV, 14 IBUs.

Pennybacker Porter

We love wheat beers and we love porters. So we decided to bridge the gap and create a wheat porter that borders on the Baltic porter style. We blend wheat, munich, crystal, chocolate, and victory malts with spicy German hops. Bready aromas and faint chocolate notes swirl around a thick ribbon of caramel. This beer is smooth, malty, and nicely balanced. 6.0% ABV, 29 IBUs.

Illumination

This beer answers the question: can complexity arise from simplicity? One type of malt, one type of hop, and cane sugar provide a sturdy foundation upon which we showcase a beautiful Belgian yeast strain. This Belgian blonde is bold with fruity and spicy flavors dominating and masking the strength. Simple and complex at the same time. 8% ABV, 16 IBUs.

Granite Dam Espresso Stout

The darker side of organic beer. An over the top stout with intense roasted flavors paired with an aggressive hopping schedule. Organic, fair-trade espresso freshly roasted from Ruta Maya rounds out this dark beauty. 7.4% ABV, 55 IBUs.

Deux Wit

This beer is a rye wit and an IPA all rolled up into one. We combine flaked rye, wheat, pale ale malt, and crystal during the mash. Then add orange peel, grapefruit peel, and coriander and overload the kettle with British and American hops. We then dry hop with more of the same and age on American oak. You might call this an Oak Aged Imperial India Rye Wit Ale. Kind of rolls off the tongue doesn’t it? Is this beer trying to be too much? Yeah, probably. Enjoy! 7% ABV, 50 IBUs.

Loop You In IPA

An organic American IPA. We use loads of summit and centennial hops grown in the Pacific Northwest and Colorado. This beer is a tribute to those American organic hop growers who are working to dispel the myth that American hops can’t be grown organically. 6.5% ABV, 67 IBUs.

    If these beers taste half as good as they sound (and I’m sure they do since I’ve tasted a few myself already) you have some real winners on hand. Mmm, espresso stout.

    Wow, these sound delicious. I’m especially intrigued by the wheat Porter, both styles I love how could they not be great together. I also really like the dunkelweiss style and no one makes one locally so it would definitely fill a hole in Austin’s local line-up.

    Any chance you will get to showcase these beers somewhere before you start “officially” brewing?

    Hi Sean, thanks for visiting! Yes, we definitely plan to have several tastings around Austin as soon as we get a little further along with our progress. We’ll announce it here as well as (hopefully) on some other local blogs.
